While we are building our Educational Craft Distillery in Saint Paul VA, we have created a special class option Located in Dahlonega GA.
- Dates: Friday, March 14th & Saturday, March 15th
This is a class of just 12 students so we can address and meet each individual's needs, at varying levels of experience. We will have advancing levels of classes and topics delving into specific topics and spirits shortly. This class goes over fermentation and distillation in a broad spectrum, and we get into the nitty-gritty science a bit while demonstrating traditional to modern-day takes on most topics.
What we are also offering is a weekend event bringing like-minded people with a common passion together to build a community of distillers helping one another. Here is a description of our first classes.
This will be a 2-day course in Dahlonega GA.
We are keeping class numbers down to get a personal experience so we can make sure each person learns and gets all the questions answered.
Amanda teaches both days the whole day. Food is provided. We do lunch each day.
Day 1: You join us at North Georgia Still Company for a fermentation class and mashing in with lunch. We have lots of time to socialize, so we aren't rushed at all. An icebreaker & introduction to the fundamentals, with in-depth coverage of different fermentation and mashing techniques. We make a mash, go over grains, malts, enzymes, yeasts, and more!
Day 2: You come to Big Creek Distilling Co. Just 15 minutes from North Georgia in the same town, and we strain our mash and run whiskey from beginning to end. We go over all the details we can on distilling, making cuts, blending, and addressing infusion of flavors - all while diving deep into the whole process of distillation. Lunch is also provided, as well as a tasting session. After making whiskey, we go back to North Georgia for dinner and Fire Pit Gathering where we can all just socialize, and share knowledge, stories, and libations.

-Afterward, each student is sent an invitation to join a private group on Facebook to keep in touch and join the community of folks chasing the craft so we can all help each other grow and progress.
